Strawberry tiramisu is a delicious twist on the classic Italian dessert. It combines layers of smooth mascarpone cream with fresh strawberries and coffee-soaked sponge cakes, creating a sweet and fruity experience that captivates the senses.

Ingredients:

• 250g fresh strawberries, washed and sliced

• 250g of mascarpone cheese

• 3 eggs, separated into yolks and whites

• 100g of sugar

• 200ml of whipping cream (whipping cream)

• 1 cup of espresso coffee, cooled

• 1 teaspoon of vanilla extract

• 24-30 ladyfingers cakes

• Cocoa powder for dusting

• A pinch of salt

Delicious and refreshing, the homemade strawberry tiramisu is a perfect combination between the sweet taste of strawberries and the softness of mascarpone cheese. A dessert that conquers the palate with each bite.

Preparation:

  1. In a large bowl, mix the egg yolks and half the sugar. Beat until the mixture becomes pale and thick.
  2. Add the mascarpone cheese to the mixture of yolks and sugar. Mix until you get a smooth and homogeneous cream. Add the vanilla extract and mix again.
  3. In another bowl, beat heavy cream until soft peaks form. You don’t need it to be fully assembled. Add the whipped cream to the mixture of mascarpone and yolks. Blend with soft, enveloping movements to keep the texture light.
  4. In another clean, dry bowl, beat the egg whites with a pinch of salt until they form stiff peaks. Add the rest of the sugar gradually and continue beating until the whites are glossy and form stiff peaks.
  5. Add the beaten egg whites to the mascarpone and cream mixture, making soft, enveloping movements to maintain the airy texture.
  6. Quickly dip the ladyfingers into the espresso and place them in the bottom of a rectangular container, forming a layer.
  7. Spread a layer of the mascarpone mixture over the cakes.
  8. Add a layer of strawberry slices on top of the mascarpone mixture.
  9. Repeat the process, alternating layers of sponge cakes, mascarpone mixture and strawberries, until you run out of ingredients. Finish with a layer of the mascarpone mixture.
  10. Refrigerate the tiramisu for at least 4 hours, or ideally overnight, to allow the flavors to blend and the biscuits to soak well.
  11. Before serving, sprinkle cocoa powder over the top layer of the tiramisu. Enjoy this delicious dessert that combines exquisite flavors in each bite. Enjoy!
