Special Chocolate Roll

The Special Chocolate Roll is a delectable dessert that combines the rich flavors of chocolate with a soft, moist cake. This indulgent treat starts with a fluffy chocolate sponge cake that is carefully rolled to encase a luscious chocolate ganache filling.

Ingredients

Pasta:
6 eggs
4 tablespoons of sugar
4 tablespoons of chocolate powder

Filling and topping:

1 can of cream with whey
3 tablespoons of sugar
6 tablespoons of chocolate powder

Method of preparation
Pasta:

Line a 24 x 33 cm baking dish with baking paper.

Preheat the oven to 220 degrees C.
Beat the egg whites, then add the sugar and beat again.  Reserve.
Separately, beat the egg yolks and add the chocolate.  (I recommend beating by hand, see explanation below) *
Incorporate the egg yolk and chocolate mixture into the egg whites.

Pour the dough onto the baking sheet, spread it evenly with a spatula and bake for approximately 20 minutes.  It will be ready when you test it with a toothpick and it comes out dry.

Remove from the oven and immediately turn out onto a damp cloth covered with a little sugar.  Just roll the dough with the help of the cloth to shape it and roll it out.
Prepare the filling and topping.

Filling and topping:

Place all the ingredients in a pan and heat, stirring constantly until it thickens and comes away from the bottom of the pan.  Wait for it to cool and use half to fill the roulade and half for the topping.

Assembly:

Place half of the filling over the roulade and spread it evenly using a spatula.  With the help of the cloth, roll it up and form the roulade.
Cover it with the other half of the cream, spreading it with the help of a spatula.
Suggestion: Serve with strawberries.
