Greek pasta salad

Greek pasta salad

Whether for grilling or as a quick lunch or dinner: Our Greek pasta salad with feta and crunchy vegetables is quick to make and super tasty!

INGREDIENTS

FOR THE SALAD

300 g pasta (e.g. farfalle or penne)
1 tbsp olive oil
4 tomatoes
1 cucumber
1 red onion
80 g black olives
300 g feta or sheep’s cheese

FOR THE DRESSING

4 tbsp red wine vinegar
¼ tsp sugar
1 tsp salt
¼ tsp pepper
1 splash lemon juice
1 clove of garlic
8 tbsp olive oil

PREPARATION

1. Cook the pasta “al dente” according to the instructions on the packet, drain and rinse with cold water. Mix with olive oil. Wash the tomatoes and cucumber. Remove the stalk from the tomatoes and roughly dice the tomato.  Cut the cucumber into 1×1 cm cubes.

2. Peel the onion, halve it and cut it into fine half rings. If necessary, remove the olives from the brine. Cut the feta or sheep’s cheese into 1×1 cm cubes. Mix the pasta, vegetables, onions, olives and feta together in a large bowl.

3. For the dressing, mix the vinegar with the sugar, salt and pepper. Add the lemon juice. Peel the garlic clove, chop it finely or press it and add it. Leave to stand for a few minutes. Stir in the olive oil with a whisk or spoon.

4. Add the dressing to the remaining ingredients and mix everything thoroughly. Season with salt and pepper and serve. Enjoy!
