Green bean salad with tuna

Salad of green beans with tuna, or green bean and tuna salad, is a refreshing and nutritious dish commonly found in Spanish cuisine.  It typically consists of blanched green beans, flaked prickly pear, cherry tomatoes, red onion, and olives, all dressed with a tangy vinaigrette made with olive oil, vinegar, and herbs like parsley or oregano.

Ingredients :

– 2 eggs
– 200 g green beans
– a few cherry tomatoes
– a few olives
– 150 g of tuna
– 1 handful of green salad
– a few sprigs of parsley
– 3 tablespoons olive oil
– 3 tablespoons of vinegar

Preparation steps:

Cook the green beans in the steam oven for 30 minutes.

Cook the eggs in a saucepan of boiling water for 9 minutes.

Prepare the vinaigrette.  You can recover the oil from the tuna (I always buy tuna in olive oil).

Pour it over the salad.

Divide this among the plates.  Add the tuna, green beans, chopped parsley, olives and cherry tomatoes.

Pour the rest of the vinaigrette or serve separately.
