Dolma
Dolma are peppers stuffed with minced meat that you are guaranteed to enjoy. With our recipe we will show you how you can easily make this Turkish dish yourself.
INGREDIENTS
6 green peppers
2 onions
2 cloves of garlic
1 chili pepper
½ bunch of parsley
some mint
1 organic lemon
300 g minced beef
5 tbsp tomato paste (3 times concentrated)
2 tbsp paprika pulp or ajvar
3 tablespoons water
2 tbsp olive oil
180 g long grain rice
Salt
2 tbsp paprika powder (sweet)
freshly ground pepper
400 ml vegetable broth
Natural yogurt (optional)
Fresh herbs (optional)
PREPARATION
1. Wash the peppers, drain them and cut off the top quarter of each. Remove the stalk and seeds, rinse the pods with cold water and drain.
2. Peel the onions and garlic and dice finely. Wash and clean the chili and cut into fine rings. Wash the herbs, drain them, pluck the leaves and chop them finely.
3. Wash the lemon in hot water, grate 2 teaspoons of peel and squeeze out 3 tablespoons of juice. Mix the minced meat with tomato and pepper pulp, water, olive oil, rice, onion and garlic cubes, chili, lemon zest and herbs and season with salt, paprika powder and pepper.
4. Stir the vegetable broth with lemon juice and remaining tomato paste until smooth and pour into a pot (approx. Ø 22 cm). Fill the peppers with the minced meat mixture up to 1 cm below the edge, put the pepper lid on and distribute it in the pot.
5. Fill the pot with water up to below the cut edge of the peppers, bring to the boil briefly and cook on the stove with the lid closed over medium heat for about 20 minutes.
6. Serve the stuffed peppers with yogurt and sprinkled with fresh herbs if desired. Bon appetit!
