Graham Crackers

Graham Crackers are a popular treat from the USA. These crispy, slightly sweet cookies are versatile.  Whether as a base for a s’mores or as a delicious crust for cheesecake – Graham Crackers are an indispensable part of American baking culture.

INGREDIENTS (For 15 pieces)

250 g whole wheat flour
125 g brown sugar
1 tsp cinnamon
1 tsp baking soda (level)
1 pinch of salt
85 g butter
65 g honey
3 tbsp milk
½ tsp vanilla extract

PREPARATION

Step 1
Mix the flour, brown sugar, cinnamon, baking soda, salt and butter in a bowl. Add the butter and honey and knead everything into a crumbly mass. Add the milk and vanilla extract and knead everything into a smooth dough.  Wrap the dough in cling film and chill for about 30 minutes.

Step 2
Preheat the oven to 190 degrees top/bottom heat (fan oven: 170 degrees). Line a baking tray with baking paper. Roll out the dough thinly on a lightly floured work surface. Cut out small rectangles (11 x 6 cm) from the dough. Press the cookies again in the middle along their length and width with the back of a knife so that it is easier to break the cookies later. It is best to measure this with a ruler.

Step 3
Place the cookies on the prepared baking tray and prick them several times with a fork. Bake the graham crackers in the preheated oven for about 10-12 minutes, then allow them to cool completely.

Our tip
Which brown sugar is the right one?
It is best to use whole cane sugar for this recipe, which has a malt and caramel note. Muscovado sugar or coconut blossom sugar are also very suitable.
