Tri-Colored Gelatin Cups

Tri-Colored Gelatin Cups

Ingredients:

– 2 cups blackberries, for the gelatin mixture
– 2 cups grape juice, for the gelatin mixture
– 3 packets of melted, hydrated gelatin for the gelatin mixture
– 2 cups plain yogurt
– 190 grams of cubed cream cheese
– 1 cup evaporated milk
– 1 cup half-and-half cream
– 1/2 cup honey
– 3 packets of melted, hydrated gelatin
– 1 tablespoon of pink or purple food coloring
– enough whipped cream for garnish
– enough strawberries for garnish

Preparation:

Blend the blackberries with the grape juice and gelatin until smooth. Strain the mixture.

Place the cups in a cupcake tin or in a smaller bowl at a 45° angle.  Carefully pour the grape jelly over the jelly and refrigerate until set, being careful not to move it, as this will cause the jelly to tilt.

Meanwhile, beat the plain yogurt with the cream cheese, evaporated milk, and half-and-half until smooth. Add the honey and gradually add the gelatin, stirring constantly.

Divide the mixture into two equal parts and color one of the mixtures with vegetable coloring.

Once the blackberry jelly has set, turn the cups over the mold or bowl at a 45° angle, but facing away from you. Fill with the colored gelatin and refrigerate until set.
Remove the cooling cups and place them on a flat surface, so they are upright. Fill each cup with the white gelatin and return to the refrigerator.

Once ready, decorate the cups with whipped cream and strawberries. Enjoy.
