Strawberry tiramisu

Strawberry tiramisu is a delicious twist on the classic Italian dessert.  It combines layers of smooth mascarpone cream with fresh strawberries and coffee-soaked biscuits, creating a sweet and fruity experience that captivates the senses.

Ingredients:

• 250g fresh strawberries, washed and cut into slices

• 250g mascarpone cheese

• 3 eggs, separated into yolks and whites

• 100g of sugar

• 200ml of whipping cream (whipping cream)

• 1 cup of espresso coffee, chilled

• 1 teaspoon vanilla extract

• 24-30 ladyfingers

• Cocoa powder to sprinkle

• A pinch of salt

Delicious and refreshing, homemade strawberry tiramisu is a perfect combination between the sweet flavor of strawberries and the softness of mascarpone cheese.  A dessert that conquers the palate in every bite.

Preparation:

1. In a large bowl, whisk together the egg yolks and half the sugar.  Blend until the mixture becomes pale and thick.

2. Add the mascarpone cheese to the yolks and sugar mixture.  Mix until you obtain a smooth and homogeneous cream.  Add the vanilla extract and mix again.

3. In another bowl, beat the whipping cream until it forms soft peaks.  You don’t need it to be fully assembled.  Add the whipped cream to the mascarpone and yolk mixture.  Mix with soft, enveloping movements to maintain the light texture.

4. In another clean, dry bowl, beat the egg whites with a pinch of salt until they form firm peaks.  Add the rest of the sugar gradually and continue beating until the whites are glossy and form firm peaks.

5. Add the beaten egg whites to the mascarpone and cream mixture, using gentle, enveloping movements to maintain the airy texture.

6. Quickly dip the sponge cakes into the espresso coffee and place them on the bottom of a rectangular container, forming a layer.

7. Spread a layer of the mascarpone mixture over the sponge cakes.

8. Add a layer of strawberry slices on top of the mascarpone mixture.

9. Repeat the process, alternating layers of sponge cake, mascarpone mixture and strawberries, until the ingredients are used up.  Finish with a layer of the mascarpone mixture.

10. Refrigerate the tiramisu for at least 4 hours, or ideally overnight, so that the flavors blend and the biscuits soak well.

11. Before serving, sprinkle cocoa powder over the top layer of the tiramisu.
