Rice with homemade Milk

Rice pudding is a traditional dessert present in many cultures, made with rice cooked in milk and sweetened with sugar. It is often seasoned with cinnamon and vanilla, creating a creamy and comforting mixture. Its popularity lies in its simplicity and delicious flavor, which make it a favorite in the cuisine of various countries.

Ingredients:

• 1 cup short grain rice

• 4 cups of milk

• 1 cinnamon stick

• 1 strip of lemon peel (without the white part)

• 1/2 cup sugar (adjust to your preference)

• A pinch of salt

• Raisins and/or nuts (optional, to decorate)

• Cinnamon powder (for sprinkling, optional)

Before making rice pudding, make sure you have short grain rice and the basic ingredients like milk, sugar, and cinnamon ready to create this delicious traditional dessert.

Preparation:

  1. Wash the rice: Rinse the rice with cold water until the water runs clear. This helps remove excess starch.
  2. Cook the rice: In a large pot, add the rice and 2 cups of water. Bring to a boil, then reduce the heat to low, cover the pot and cook for about 15 minutes or until the water has been absorbed and the rice is cooked.
  3. Add the milk and flavorings: Add the milk, cinnamon stick and lemon peel strip to the pot with the cooked rice. Bring the mixture to a boil and then reduce the heat to medium-low. Cook over low heat, stirring occasionally to prevent the rice from sticking to the bottom.
  4. Simmer: Cook the rice in milk over low heat for about 30-40 minutes or until the rice is tender and has absorbed much of the milk. Continue stirring occasionally to prevent a crust from forming on the bottom.
  5. Add sugar and salt: When the rice is almost cooked, add the sugar and a pinch of salt. Stir well to make sure the sugar is completely dissolved.
  6. Finish cooking: Continue to simmer for another 10-15 minutes, stirring constantly until the rice has a creamy texture and the rice is fully cooked.
  7. Remove the flavorings: Once the rice pudding has the desired consistency, remove the cinnamon stick and lemon peel.
  8. Serve: Serve the hot rice pudding in individual cups. You can sprinkle cinnamon powder over the top and decorate with raisins and/or nuts if you wish.
  9. Cool and enjoy: If you prefer to eat the rice pudding cold, let it cool to room temperature and then refrigerate before serving. Enjoy your delicious homemade rice pudding!
