Sweet and fluffy brioche bread

Brioche bread is a type of bread of French origin known for its tender texture and sweet, buttery flavor, thanks to its high proportion of eggs and butter in the dough, making it ideal for both sweet and savory dishes.


For the mass:

• 500 grams of wheat flour

• 75 grams of sugar

• 10 grams of salt

• 10 grams of instant yeast

• 4 eggs

• 120 ml of warm milk

• 200 grams of butter at room temperature

For finishing and decoration (optional):

• 1 beaten egg (for brushing)

• Pearled sugar (optional)


1. In a large bowl, whisk together the flour, sugar and salt.  Add yeast instantly and mix well.

2. Add the lightly beaten eggs and warm milk to the flour mixture.  Mix everything until the ingredients are combined.

3. Knead the dough on a floured surface for about 10-15 minutes, until smooth and elastic.

4. Add the room temperature butter to the dough.  Continue kneading until the butter is completely incorporated and the dough is smooth and shiny.  This may take an additional 10 to 15 minutes.

5. Place the dough in a lightly greased bowl, cover with a clean, damp cloth, and let the dough rest and rise in size for about 1-2 hours, or until it doubles in volume.

6. Once the dough has doubled in size, tap it gently to degas it.  Then, divide it into portions and shape it however you want (you can make individual loaves, a large braid, etc.).

7. Place the dough shapes on a pre-greased or parchment-lined baking sheet.  Cover again with the damp cloth and let the shapes rest for about 30-45 minutes, until they increase in size again.

8. Preheat the oven to 180°C (350°F).

9. If you wish, brush the surface of the shapes with beaten egg and sprinkle pearl sugar on top to give it a decorative and crunchy touch.

10. Bake in the preheated oven for approximately 20-25 minutes, or until the loaves are golden brown and sound hollow when gently tapped on the bottom.

11. Once baked, remove the panels from the oven and let them cool on a rack before cutting and enjoying.
