Lemon Posset
Lemon Posset is a fruity dessert from England. The simple cream made from cream and lemons is arranged in glasses and served with fresh raspberries. You only need 5 ingredients for the recipe!
INGREDIENTS (For 6 servings)
FOR THE CREAM
3 lemons
600 g cream
150 g sugar
¼ tsp salt
ALSO
Some lemon zest
Fresh raspberries
PREPARATION
Step 1
For the cream, wash the lemons with hot water and dry them. Finely grate the peel of two lemons, then halve all three lemons and squeeze them. You should use about 125 ml of juice for the recipe.
Step 2
Put the cream, sugar, lemon zest and salt in a small saucepan and bring to a simmer. Reduce the heat to medium and simmer the mixture for around 15-18 minutes until it thickens slightly, takes on a light yellow hue and has reduced to 500 g. The final weight is crucial to get the right consistency later.
Step 3
Pour the lemon-cream mixture through a fine sieve into a measuring cup, then divide evenly between six glasses (125 ml each). Refrigerate the desserts uncovered for at least 2 hours, then cover with cling film if they are not to be served immediately.
Step 4
Garnish the lemon cream with a little lemon zest and fresh raspberries, then serve chilled. The lemon possets will keep in the fridge for at least 3 days.
