Caramel ice cream
You can easily make caramel ice cream yourself at home. Dark caramel is refined with cream, milk, egg yolk and vanilla and stirred in the ice cream maker to a creamy mass.With our recipe it tastes better than from the ice cream parlor.
INGREDIENTS (For 12 servings)
250 g sugar
60 ml water
½ tsp lemon juice
500 g cream
250 ml milk
¾ tsp salt
2 tsp vanilla paste
PREPARATION
Step 1
Put 225 g sugar, water and lemon juice in a large saucepan and dissolve the sugar completely on a low heat while stirring.
Step 2
Set the stove to medium and cook the caramel (without stirring!) for about 6-12 minutes until it takes on a dark brown-reddish color. The darker you cook the caramel, the more intense the flavor and the less sweet it will be (but of course you don’t want to burn it either). Warning: The caramel is very hot, don’t touch it!
Step 3
Take the pan off the hot stove and immediately add the cream slowly while stirring. Warning: The caramel may splash a little, keep your distance! Mix in the milk and salt.
Step 4
Mix the egg yolk and 25 g sugar in a large bowl with a whisk until smooth. Put the caramel mixture back on the stove and bring it to a simmer on a low heat, stirring if necessary to dissolve any undissolved pieces of caramel.
Step 5
Gradually add half of the hot caramel mixture to the egg yolk and sugar mixture with a ladle and stir immediately. Put the caramel-egg yolk mixture back into the pot with the rest of the caramel mixture and heat over a low heat, stirring constantly, until the mixture thickens slightly and a thermometer shows 83 degrees. Finally, stir in the vanilla paste.
